Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. "The flavor of roasted cauliflower is wonderful!" 

Fresh Peach-Blueberry French Toast Bake



"Not your typical French Toast ~ the fresh peaches & 
blueberries combine for just the right touch of sweetness and texture!"


INGREDIENTS:
1 cup whipping cream
4 eggs
4-5 slices of bread (white, multi-grain or gluten free)
2 medium peaches
1 cup blueberries
3 Tbs. brown sugar

PREPARATION:
Preheat oven to 325 degrees F

1.   Combine cream and eggs; mix well.

2.   Cut fresh peaches into 1/4” slices.

3.   Spray the bottom and sides of a 9” x 5” loaf pan with non-stick cooking spray.

4.   Place 1 slice of bread in the bottom of the pan.  Cut a piece from another slice to cover remaining space on the bottom of the pan.

5.   Lay 1/3 of the peaches and blueberries over the top of the bread.

6.   Pour 1/3 of the cream-egg mixture over the bread and fruit.

7.   Repeat steps 5 and 6 two times.

8.   Sprinkle brown sugar over the top.

9.   Bake uncovered, for 55 minutes. 

10. Remove from oven and let sit for 5 minutes.

11. Slice, plate, serve & enjoy!

NOTE:  You can prepare this the night before and refrigerate until baking.
