Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. "The flavor of roasted cauliflower is wonderful!" 

Chicken and Shrimp Linguine with Fresh Tomatoes and Feta

Shrimp, Chicken, Fresh Tomatoes, Feta Cheese and Linguine.  With those ingredients how can you go wrong?  This skillet meal is so light and fresh.  The fabulous flavor of each ingredient delights your taste buds with every bite.

INGREDIENTS
8 oz. linguine
3 Tbs. olive oil
1 cup onion, coarsely chopped
1 teaspoon red pepper flakes
2 garlic cloves, crushed and chopped
2 - 2 1/2 cups tomatoes, chopped
2 Tbs. tomato paste dissolved in 3/4 cup water
1 teaspoon oregano
3/4 lb. shrimp, peeled and tails removed
3/4 lb. chicken breast, cut into bite sized pieces
1/2 cup fresh parsley, chopped
1 cup feta cheese, crumbled

PREPARATION
1.   Prepare linguine according to package directions.  Drain, toss with 2 Tbs. olive oil and set aside.

2.   In a large skillet, sauté onion in 2 Tbs. olive oil until it softens; about 4 minutes.

3.   Add red pepper flakes and garlic; sauté for a minute longer.

4.   Add shrimp & chicken; sauté until the shrimp are pink (turning once-about 3 minutes). 

5.   Add tomatoes, tomato paste dissolved in water and oregano; stir and sauté a minute longer.

6.   Add linguine and fresh parsley; gently toss to combine all ingredients.

7.   Divide onto plates and sprinkle the feta over each plate.


8.   Serve and enjoy!
