Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. Broccolini, Pine Nut and Feta Sauté

Broccolini ~ it is not just a fancy name for stringy broccoli.  The flavor, once sauteed, is milder than traditional broccoli and the steps are quite tender.  I added the sauteed pine nuts and creamy feta cheese to finish off this great vegetable side dish.

INGREDIENTS:
3-4 bunches broccolini (enough for 4 portions)
1 Tbs. olive oil
1-2 garlic cloves, crushed and finely chopped
3 Tbs. pine nuts
1/4 cup feta cheese, crumbled

PREPARATION:

1.     Trim off the bottom 2” of the broccolini stems

2.     Place broccolini in a large skillet filled with 1/2" of water.  Cover and simmer for 3-4 minutes. 

3.     Drain water; add olive oil, garlic and pine nuts and sauté for 2 minutes.

4.     Plate the broccolini and sprinkle with feta cheese.

5.     Serve and enjoy!
