Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. "The flavor of roasted cauliflower is wonderful!" 

Fig and Pear Salad

If you're like me, salads always seem to taste better when someone else makes them.  Although I can't pop over to your home and deliver this fabulous salad, specially made just for you; I can assure you that is will taste like I did (if not better)!
"Toss this together for an impressive, delicious
and healthy salad!"

INGREDIENTS:
1 large head lettuce (butter, red leaf or green leaf), loosely chopped
1 cup pecans or walnuts, chopped
4-5 fresh figs, thinly sliced
1/4 cup Italian salad dressing
1 Bartlett pear, cored and sliced and halved
1/2 cup Feta cheese, crumbled

PREPARATION:

1.     In a large bowl; mix lettuce, walnuts and figs.

2.     Pour dressing over salad; toss well.

3.     Add pear and feta; gently toss to mix.


4.     Serve and enjoy!
