Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. "The flavor of roasted cauliflower is wonderful!" 

Roasted Garlic

"This roasted garlic is fantastic for garlic
bread, spreads or in your favorite recipe!"



INGREDIENTS:
3-6 garlic heads
1-2 Tbs. olive oil
Sea salt

PREPARATION:
Preheat oven to 375 degrees F

1.      Slice off the top of the garlic heads (about ¼”)

2.      Place garlic heads in a glass baking dish or pie pan.

3.      Pour olive oil over heads; roll heads in oil to coat.

4.      Season lightly with sea salt.

5.      Roast garlic, cut side up, for 30-40 minutes.


6.      The roasted cloves will pop out of the head.  Use in any of your favorite recipes, as a spread, or for a delicious garlic bread!
