Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. Smoked Sausage, Sautéed Onion, Potato and Thyme Skillet

Some days a simple meat and potatoes dinner just hits the spot.  This skillet meal may be quick to prepare but it is not short on flavor.  The fresh thyme adds a terrific touch to the sauteed smoked sausage and browned potatoes. So satisfying (and my gluten free friends love it)!

INGREDIENTS:
3 teaspoons olive oil
6 red skin potatoes, cut into bite sized pieces
1 lb. smoked sausage link, ¼” slices
1 large onion, quartered and sliced
3 garlic cloves, finely chopped
1 teaspoon smoked paprika
1 Tbs. fresh thyme
3 garlic cloves, finely chopped

PREPARATION:


1.     In a large skillet, sauté potatoes in olive oil until potatoes begin to brown. (About 6-8 minutes.)

2.     Add the sausage and onions and sauté until the onions soften. (About 6 minutes.)

3.     Sprinkle with smoked paprika, thyme and garlic.  Stir to distribute seasonings.

4.     Sauté on low heat for about 4 minutes longer to release flavors.

5.     Serve and enjoy!
