Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. "The flavor of roasted cauliflower is wonderful!" 

Cheeseburger Flatbread


"All the taste of a cheeseburger on a flatbread!"
2 flatbread crusts (purchased)
6-8 bacon slices, cooked and chopped
1/2 lb. ground beef
1 medium onion, sliced and chopped
1/2 cup tomato sauce
1 cup cheddar cheese, grated

PREPARATION:
Preheat oven to 350 degrees F


1.     In a skillet, cook the bacon.  Remove bacon from pan and chop.  Pour excess oil from pan, add ground beef, onions and chopped bacon.

2.     Cook over medium heat until meat is cooked through and onions are softened. 

3.     Using a slotted spatula, scoop mixture into a bowl leaving oil from the meat in the skillet.

4.     Add tomato sauce to the bowl and mix.

5.     Place flatbread crusts on a baking sheet.  Spread meat mixture evenly over the crusts.

6.     Sprinkle cheddar cheese over the meat mixture.

7.     Bake for 10-15 minutes; until cheese begins to melt.

8.     Serve and enjoy!
