Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. "The flavor of roasted cauliflower is wonderful!" 

Green Chilies and Cheese Breakfast Casserole

“A breakfast fiesta!”


INGREDIENTS:
6 eggs
3 tablespoons butter, melted
1/4 cup flour
1/2 teaspoon baking powder
1 cup cottage cheese
2 small cans chopped green chilies
3 cups pepper jack cheese, shredded
1 1/2 cup ground sausage, cooked (optional)
Salsa
Avocado and sour cream (optional)

PREPARATION:
Preheat oven to 350 degrees F

1.      In a large bowl, crack eggs, break yolks, and mix well with a hand mixer on low.

2.      While mixing, pour in melted butter, and sprinkle flour and baking powder into bowl.  Mix until all lumps are gone.

3.      Remove hand mixer.  Add cottage cheese, chilies and pepper jack cheese to bowl.  Mix until eggs are evenly dispersed through mixture.

4.      Pour mixture into an 8” square glass pan that has been sprayed with non-stick cooking spray.

5.      NOTE:  If you are using sausage in your casserole, spread the cooked sausage over the bottom of the pan before adding the eggs.

6.      Cook for 25-30 minutes; until the center is firm.

7.      Slice casserole into wedges, pour some salsa over top.  You can also top with a dollop of sour cream and a slice of avocado.
