Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. Marinated Ahi with a Cilantro & Honey Glaze

My neighbor is an avid fisherman -- lucky me!  He brought over some fresh Ahi and I decided to try something a little different with it's preparation.  I had recently picked up some honey from the farmers market and had a bunch of fresh cilantro so I let my mind wander...  The subtle sweetness of the honey coupled with the fresh cilantro is a wonderful glaze to top the marinated ahi.  Just delicious!

INGREDIENTS:
2-3 Ahi Tuna Steaks
1/4 cup olive oil
1/4 cup fresh lime juice (about 2 limes)
1/2 teaspoon lime zest
3 Tbs. balsamic vinegar
3 garlic cloves, crushed and finely chopped
2 teaspoons ginger
1/3 cup fresh cilantro, chopped (reserve a bit for garnish)
1/4 cup honey
2 tablespoons olive oil

PREPARATION:

1.   In a glass bowl, combine olive oil, lime juice and zest, balsamic vinegar, garlic, ginger, and cilantro.

2.   Place tuna steaks in a large ZipLoc plastic and pour marinade over the steaks.  Seal bag and marinate in the refrigerator for 2 hours.

3.   In a small bowl, combine honey and olive oil.  Set aside.

4.   Heat a large non-stick skillet over medium-high heat.  (If you do not have a non-stick skillet, gently wipe a bit of canola oil over the bottom of the pan.)

5.   Remove steaks from marinade and place on hot skillet.  Cook for 1-2 minutes and gently turn; cook for an additional 1-2 minutes.  Steaks should be seared on the outside and rare on the inside.

6.   Remove steaks from skillet and place on cutting board.  Using a sharp knife cut steaks into 1/2" strips.

7.   Fan steak strips across place; brush honey mixture over each steak and sprinkle with cilantro.

8.   Serve and enjoy!
