Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. "The flavor of roasted cauliflower is wonderful!"

Homemade Fresh Pear Sauce

What's good for the apple is good for the pear :)   Enjoy this homemade pear sauce warm or cold.  Delicious addition to any meal, as a snack or even dessert!

"A delicious option to applesauce."

INGREDIENTS
5-6 fresh pears (Bartlett, Anjou, Bosc), peeled, cored and sliced 1/4"
1/2 teaspoon lemon juice
1/4 cup water
1/2 teaspoons cinnamon
1/8 teaspoon nutmeg
1 Tbs. agave sweetener (optional)

PREPARATION

1.   Put pears, lemon juice and water in a saucepan.  Cover and cook on low for 15 minutes; pears will soften.

2.   Gently crush pears with a fork to form the sauce (I prefer keeping a few lumps).  Sprinkle with cinnamon, nutmeg and sweeter; stir to mix well.

3.   Heat, uncovered, for 15 minutes to allow some of the water to evaporate.

3.   Serve and enjoy!
