Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. "The flavor of roasted cauliflower is wonderful!" 

Fresh Salsa ~ Puerto Vallarta Style

While vacationing in Puerto Vallarta, I was so very fortunate to find one of those "hole in the wall" restaurants with fabulous authentic food.  The owner graciously invited me back to the kitchen and shared some of his recipe secrets.  This recipe is my recreation of the incredible salsa I enjoyed every day of my trip!  The fresh ingredients blend for a perfect flavor.  Serve with chips, over fish or chicken, and of course with taco's or burritos! Delicious.

INGREDIENTS
1 1/2 cups fresh tomatoes, chopped (I used 3-4 Roma)
1/2 cup red onion, chopped
1/2 cup fresh cilantro, chopped
1 teaspoon jalapeno pepper, seeded and finely chopped

PREPARATION
1.   In a glass dish, combine all ingredients. 

2.   Refrigerate for 2-3 hours to allow the flavors to combine.

3.   Serve and enjoy!

 Suggestions: Serve over fish, chicken, with tacos or burritos, or with tortilla chips.
