Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. "The flavor of roasted cauliflower is wonderful!" 

Mushroom and Onion Sauté

Your kitchen will smell fabulous.  This saute is a great topping for so many dishes: steak, burgers, chicken, sandwiches, potatoes or even as a stand alone side dish.  Toss the ingredients into the pan ~ saute ~ and you're good to go!

INGREDIENTS
1 sweet white onion, halved and sliced
1 lb. fresh mushrooms, sliced
2 cloves garlic, crushed and finely chopped
2 Tbs. olive oil
Salt and pepper

PREPARATION
1.   In a large skillet, sauté onions in olive oil until they begin to soften.

2.   Add mushrooms and sauté for 6-8 minutes; the liquid from the mushrooms should evaporate.

3.   Add garlic, stir and sauté for a minute longer; garlic will be fragrant.

4.   Salt and pepper to taste.

5.   Serve and enjoy over steak, chicken, or as a side dish!
