Every twist in this pasta holds a bit of the feta and tomatoes ensuring balanced flavor in every bite. If you're a fan of traditional shrimp scampi, you are sure to enjoy this delicious skillet dinner. It's a definite go-to when entertaining friends!

INGREDIENTS:
8-10
oz. campanelle pasta (or pasta of your choice)
1/4
cup butter
2
Tbs. olive oil
1
cup red onion, coarsely chopped
2
teaspoons oregano
6
cloves garlic, crushed and chopped
1
lb. medium shrimp
1/4
cup white wine
3
cups fresh tomatoes, seeded and chopped
1/4
cup flat leaf parsley, chopped
2
cups feta cheese, crumbled
Sea
salt and pepper to taste
1/4
cup flat leaf parsley, chopped
PREPARATION:
1.
Prepare
pasta according to package directions. Drain,
add 1/4 cup butter to pasta and gently mix to coat noodles. Set aside.
2.
In
a large skillet; sauté the onions in olive oil until they begin to soften,
about 5 minutes.

Add
the oregano, stir.
4.
Add
the garlic, shrimp and white wine. Sauté
until the shrimp just turn opaque (2-5 minutes depending on the size of your
shrimp).
5.
Add
fresh tomatoes, parsley and feta cheese; stir to combine ingredients and simmer
for 3 minutes. (Reserve 1/4 cup feta
cheese for garnishing.)
6.
Add
pasta to skillet; gently stir to combine all ingredients. Simmer for 5 minutes to allow flavors to
blend.
7.
Sprinkle
reserved feta over each dish.
8.
Serve
and enjoy!
