The last time I prepared this dish was before my daughter was born ~ yikes, it's been to long! The fresh ingredients come together to create a traditional Greek dish that so light and flavorful. With so many folks looking for healthy recipe options, I thought is was the perfect time to share this dish.

INGREDIENTS:
4-6
fish fillets, (halibut, cod, mahi mahi or your favorite white fish)
Salt
and pepper

lemons
2
Tbs. olive oil
3
medium onions, halved and sliced
4
garlic cloves, crushed and chopped
1
can chopped tomatoes
4-6
fresh tomatoes, cored and chopped
1/4
cup fresh parsley, chopped
1
teaspoon paprika
1/2
teaspoon cinnamon
1/3
cup white wine or chicken broth
PREPARATION
Preheat
oven to 375 degrees F
1.
Place
fish in a glass baking dish. Season with
salt and pepper.
2.
Cut
one lemon in half and slice one of the halves into thin slices for garnish.
3.
Squeeze
the fresh lemon juice from the remaining half and the other whole lemon over
the fish. (Take care not to let the seeds in the dish.)
4.
In
a large skillet, saute the onions in olive oil until they soften; 8-10 minutes.
5.
Add
the garlic and saute for about a minute longer.
6.
Add
the canned and fresh tomatoes, stir.
7.
Sprinkle
parsley, paprika and cinnamon over the mixture, stir.
8.
Pour
white wine into the skillet and bring mixture to a boil. Reduce heat and simmer for 12-15
minutes. Stir occasionally.
9.
Pour
skillet mixture over the fish. Be sure
each fillet is covered.
10.
Bake
for 15-20 minutes; until fish is opaque.
11.
Serve
and enjoy!
Suggestion:
Serve over rice, couscous, or mashed potatoes.
