Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. "The flavor of roasted cauliflower is wonderful!" 

Hearty Mushroom and Onion Meat Sauce

There is something about the aroma of sauteing mushrooms and onions... Mmmmm  
Unlike a traditional tomato based sauce; this recipe brings the rich flavors of the mushrooms, onions and meat to the forefront.  The variety of textures and rich flavors come together for a hearty topping for your favorite pasta.  I heated up the leftover sauce and served alongside a loaf of sourdough bread for dipping.  It was delicious!

"Sauteed onions and mushrooms in a thick, flavorful meat sauce."

INGREDIENTS:
1 lb. ground beef, (you may substitute ground lamb or turkey)
3 Tbs. olive oil
1 large onion, coarsely chopped
1 lb. fresh mushrooms, sliced
4 garlic cloves, crushed and chopped
1 Tbs. oregano
2 Tbs. parsley
2 cans diced tomatoes

PREPARATION:

1.     In a large skillet, brown the ground meat until cooked through.  Drain excess liquid.

2.     Add olive oil, onions, and mushrooms to the pan; stir to combine and sauté over medium heat for 10 minutes.

3.     Add the garlic and sauté for 1-2 minutes longer.

4.     Pour the diced tomatoes over the meat mixture, stir to combine.

5.     Sprinkle seasonings over the sauce, stir, and cook on low for 15 minutes to allow flavors to blend.


6.     Serve over your favorite pasta, rice, spiralized noodles or on with a crunchy loaf of sourdough bread!
