Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. Smoky Paprika Tri-Color Potatoes

oven roasted potatoes."


INGREDIENTS
2 pounds fingerling potatoes, cut into bite sized pieces
4-6 Tbs. olive oil
2 Tbs. smoked paprika
2 teaspoons sea salt
1/2 teaspoon fresh ground pepper

PREPARATION
Preheat oven to 400 degrees

1.     Wash potatoes.

2.     Place potatoes in a 9” x 12” glass baking dish.  Pour olive oil over the potatoes and mix to coat well.

3.     Sprinkle paprika, salt and pepper over potatoes.  Mix well to ensure the seasonings are distributed evenly.

4.     Roast in oven for 30 minutes.


5.     Serve and enjoy!
