Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. "The flavor of roasted cauliflower is wonderful!" 

Pizza Dough



INGREDIENTS:
1 cup warm water
2 – 2 1/2 cups flour (reserve 1/2 cup to add if needed)
11/2 tsp. instant dry yeast
2 teaspoon sea salt
1 Tbs. honey
3 Tbs. olive oil

PREPARATION:

Preheat oven to 475 degrees F

1.     Place warm water in a large mixing bowl.

2.     In a separate bowl; combine 2 cups of the flour, yeast, and salt.  Mix well.

3.     Slowly add flour mixture to the water; mix as you go.  Add the reserved flour if needed.

4.     Add oil to dough and kneed for about 4 minutes.  Form into a ball.

5.     Cover lightly with a linen towel and allow the dough to rise for 2 - 2 1/3 hours.

6.     When the dough is almost finished rising, preheat your pizza stone in the oven; approx. 20-25 minutes.

7.     Once the dough has risen, roll lightly in flour and gently stretch into a circle.  Flip and gently sprinkle with four to keep it from sticking to the counter/parchment paper.  (For ease of moving the dough, place on parchment paper.)

8.     Top with desired toppings.

9.     Slide pizza (along with parchment paper if used) onto pizza stone.

10.  Bake for 8-11 minutes.

11.  Let cool for 2-3 minutes before cutting for best results.

12.  Serve and enjoy!
