Roasted Cauliflower Bisque

Cauliflower is now being touted as the new Kale ~ for folks that haven't warmed up to the texture and flavor of kale, this is good news.  Cauliflower tends to take on the flavor of what it's paired with.  It's also extremely versatile; you can bake, broil, boil, steam, rice, saute, mix with just about anything or enjoy it raw.  I chose to prepare a simple bisque with the head of cauliflower I had in my refrigerator.  It's light and has a lovely mild flavor.  You could add cheese, veggies or a protein to add a little zip to this bisque. "The flavor of roasted cauliflower is wonderful!" 

Savory Chopped Salad

"So quick, so simple, so delicious!"


INGREDIENTS:
1 large or 2 small heads of Romaine lettuce, loosely chopped
1/2 cup dried cranberries
1/2 cup golden raisins
1/2 cup pecans or walnuts
1/2 cup crumbled bacon
1/2 cup feta cheese, crumbled
1/8 cup poppy seed salad dressing
1/8 cup Italian salad dressing

PREPARATION:

1.     Add lettuce to large bowl and mix in dried fruit and nuts.

2.     Mix two dressings together and pour over salad; toss well.

3.     Add bacon and cheese; toss lightly.

4.     Serve and enjoy!
